Help please

Has anyone any tips on how to write software by hand and remember everything needed?

We have an old-school (prefers to use paper instead of computers) lecturer teaching us software and in two weeks we've to write up a fully working Java and python program by hand with no notes. I'm really terrible when it comes to remembering a load of things at once, so any tips are appreciated.
