Is it better to send one large network packet or several smaller network packets?

What's the difference, in terms of performance and system load, between sending data over the network as one large packet or splitting the same data up into several smaller network packets? I am interested especially when considering lots and lots of network packets being sent at once, and whether splitting them up into smaller pieces improves or degrades performance in what ways.
