How do you showcase projects in your portfolio without exposing company data?

So I have a handful of development projects and software I’ve written to automate various processes, but the code contains sensitive information I don’t want exposed. I use dotenv to hide keys and whatnot, but certain things like email addresses and groups are hardcoded into my source code and I don’t want to expose anything sensitive on GitHub. What’s the best way to showcase my talents?
