POS Software Development

I have been away from the SD scene for a couple of years. What current toolstack would you advise me to use to develop a 3-tier simplistic POS that will accomplish basic CRUD operations with reporting capabilities. Which frameworks should I use/follow? Which programming language and server would be suitable? I was thinking Python with some basic Web Server running on Linux.
