How do I create my own API based on an open-source API?

I’m a front-end engineer building a personal project. I’m working with an open source API with a request limit. I want to fetch and store the data myself a few times a day and make the data available via my own API, so that I’m not restricted to the open source API limits. What’s the best route to go about this?
